Turkey Almond Salad
lbs. mixed lettuce, shredded or torn, or gourmet lettuce mix
3/4 lb. red cabbage, shredded
lbs. smoked turkey, cut in julienne strips
lb. low fat mozzarella cheese, cubed
1-1/2 lbs. apples, medium, cubed (3 apples)
8 oz. raisins
oz. blanched, silvered almonds
lb. vinalla-flavored low fat yogurt
12 oz. light mayonnaise or salad dressing
as needed - lettuce leaves
needed - apple slices
In a large bowl, combine lettuce, cabbage, turkey, mozzarella,
cubed apples, raisins, and almonds; toss well.
For dressing, stir together yogurt mayonnaise, milk, and apple
juice concentrate until well blended.
For each portion, line a service plate with lettuce leaves. Toss
2 cups salad mixture with 1/3 cup dressing; serve over lettuce
leaves. Garnish with apple slices.
